Launching Mantra Japanese Restaurant in St Albans, Hertfordshire has enabled me to combine two ot my greatest passions;
food and travel Having travelled to Japan over the past several years it never ceases to amaze me how dramatically and
quickly things there can change; yet, at the same time, there is such an awe-inspiring and humbling respect for tradition.
Old and new stand side by side in all facets of lite.
Japanese cuisine is no exception; at one end of the scale there is the formal and exquisite Kaiseld cuisine; and at the
opposite end of the spectrum lay the fast-food outlets. In between these two extremes resides an eclectic mix of Buddhist
vegetarian specialities; street food or Izakaya.
Incredibly no matter where you dine you can be rest assured that, in every instance flavour, appearance, freshness and
texture are of utmost importance. Although I love the dining diversity of Japanese cuisine, Mantra has been inspired by
my curiosity of Yoshohu; a magical blend of authentic Japanese cuisine with a fresh contemporary twist resulting in an
array of exciting and delicious new dishes.
